2. In the saucepan, bring water to a simmer. Place the heat-proof bowl on the saucepan, ensuring it doesn't touch the water. Add the coconut oil or cocoa butter to the bowl and let it melt gently. 

3. Once the coconut oil or cocoa butter has melted, add the cocoa powder, powdered sugar, and vanilla extract to the bowl. Stir the mixture continuously until all ingredients are well combined and smooth. Make sure the sweetener dissolves completely.

4. Taste the chocolate mixture and adjust the sweetness or flavour if necessary. Add more powdered sugar and vanilla extract according to your preference.

5. If you're using molds, carefully pour the chocolate mixture into them. You can also pour the chocolate onto a baking sheet lined with parchment paper to create a thin layer.
